It’s been 2 years since I started writing

Life’s been busy happening and before I realized season 2 has ended! Nevertheless, in the past year, I sure had fun grillingcooking and baking. Apart from the joys of sharing my stories and my signature recipes, my blog gives me something more –  the motivation and the encouragement to strive for more! And that comes from you, it’s followers. It’s an integral part of my food blog since it has pushed me to make interesting dishes and take mouth-watering pictures. My blog was definitely the reason I went to culinary school this year… And now that I did it, I hope to use all the tricks in my bag to make this season more exciting.  Of course, you’ll also get to taste a little bit of California along with NJ & NY in the upcoming concoctions of this season 🙂

So, sit back, relax and enjoy the first post of season 3 with a light and refreshing dessert.

Mixed Berries in Wine

(Fresh Berries macerated in Wine)

Nothing says Summer quite like beautiful, fragrant berries!  I love all kinds, especially when they’re in season. Usually I snack on them straight up or jazz them up with my classic choco-rum sauce but this time I used the maceration technique I learnt at school. It’s a simple process where by fresh fruits are combined with sugar and acid or liqueur and left to hang out while the flavors exchange. It can be used for fresh fruits of any kind, berries, cantaloupe, peaches, plums, oranges, etc. After a couple of hours, the fruits  release their natural juices and brighten up after drinking up a little bit of the liqueur 😉

For my dessert, I picked a special wine, 2009 Rosato di Merlot, from the Channing Daughters Winery of Bridgehampton, in Long Island, NY. Last Summer, while I was living on the east coast, I visited the beautiful Hamptons and this little winery, that sits on a piece of land surround by the grape vines.

The wine, Rosato di Merlot, is a juicy, medium-bodied Rosé wine made from hand-harvested Merlot grapes.

With a wonderful zing and a deliciously sweet-tart strawberry-like flavor, this blush wine is perfect for macerating the berries!

Serves 2

1 cup of berries (mixed or your favorite kind), lightly rinsed

granulated sugar

1 cup wine (light red or fruity white)

mint leaves, for garnishing

Toss the berries along with sugar in a bowl. Add the wine and let it macerate in the refrigerator for about an hour or so.

Garnish with mint leaves and serve.
