My friend Vasanti has invited me today on the occasion of friendship day to share a favorite recipe of mine . So I began to think about my favorite foods and it all came down to the food I grew up on . The comfort food that makes you feel closer to home while being so far away. This is a curry my mom would make for me growing up . So to all the readers of this wonderful blog I offer you this very special concoction from my mom’s kitchen – Shrimp Green Curry .And since I am visiting India right now I really did make it in my mom’s kitchen. It is really simple, fast to prepare and delicious to eat. It has a bit of a Goan influence with a base of coconut green chutney.
Shrimp (½ kg or 1 lb)
Coconut grated 1cup
Garlic paste 1 tsp
Ginger paste1 tsp
Green Chillies 7-8
Corriander leaves 1 cup
Lemon Juice 2-3 tsp
Salt to taste
Marinate the shrimp in garlic ,ginger paste and turmeric.
Grind together green chillies, corriander leaves, and coconut adding water to make a chutney.
In a pan add a little oil and shallow fry the shrimp until half cooked.
Then add the ground chutney ,salt and water.
Let it simmer on low heat.
To bind the curry together make a paste of besan in water and add that to the curry.
The consistency of the curry should be a little bit on the thicker side.
Finally add lemon juice and enjoy with rice.
