Roshni and I go back many years! She is the bubbliest, prettiest and smiley-est person I have ever met! What I did not know for the longest time was that she also makes the tastiest food! I was wowed by her culinary skills when she whipped up an awesome Mexican lunch for us one day. Today, she is presenting one of my all-time favorites – Lobster Rolls!
Lobsters are selling at a 25 year low price, I don’t know what’s sparked it: recession? global warming? Lobsters mating like crazy?! Who knows, but the abundance of fresh and affordable lobster has made me into one very happy lobster eater! The recipe below is very simple, light meal and can be prepared in less than 30 mins. Perfect for a quick dinner on a hot evening or pair it with a lovely white wine and you have an indulgent dinner for the weekend!

Servings: 4
Preparation Time: 30 mins
Ingredients:
4 cups of lobster meat from steamed lobsters (approximately 2 1 1/2 to 2 pound lobsters)
2 Ripe Hass Avocados
1/2 cup mayonnaise
juice from 1 lemon (according to your taste)
1 teaspoon salt
1/2 teaspoon black pepper
Hot Dog buns
4 teaspoons of butter.
1 Large bag baked Potatoes Chips
Directions:
In a large bowl, chop lobster into bite sized chunks.
Gently stir in the mayonnaise, salt, pepper and lemon juice.
Cover the lobster and refrigerate.
Take a grill pan, turn the gas high, till its burning hot.
Smear butter on to the buns and lightly grill.
Slice the avocados lengthwise, and arrange on one side of the rolls.
Scoop in the lobster salad in generous portions and serve with potato chips.

Side Note:
For the first time Lobster Cook, Don’t be intimidated by this delectable crustacean. If you don’t know how to steam / crack the lobster, simply have your local fish guy do it for you. Most supermarkets are happy to do it.
